Some of you may remember a post I did on the CSIRO diet and cook books a little while back. Now that spring is here I’ve remembered my number one dish from this book and one that I’ve returned to many times. This was the last thing I made using my oven before we started camp cooking while waiting for the new kitchen to be installed (seems like a distant memory now but was actually only a few weeks ago).

I had neglected making pumpkin soup for quite some time. Pretty much everyone likes pumpkin soup but I get the feeling that many people, like me, are constantly on the search for a better recipe – the perfect one. The classic pumpkin soup doesn’t do all that much for me and while I really like Thai influenced versions with curry paste and coconut milk they can be high in fat. Soup for lunch in winter is just about the perfect meal in my book and I’m always keen to have a wide variety. So I decided after recently making quite a range of soups, including creamy broccoli and pear & beetroot this week, it was time to revisit pumpkin.

Mid-week cooking can be a drag – especially in the colder months. It’s dark when you get home from work and the last thing you feel like doing is cooking. This is where tried and true classics that are easy to do and essentially just use one pot really shine. Risotto falls into this category with the added bonus that you can create a different dish each time by adding the extras (meats, vegetables, herbs, spices) depending on what you’ve got and what you fancy.
